Cinamon roll :⋆˚࿔ 𝜗🥧🧸🍂𝜚˚⋆
For the brioche:
-350gof flour+50g+ a little extra for the work surface
-1sachet of instant baker's yeast (5g)
-200g of whole milk+ a little extra for brushing
-60g of salted butter
-50g of brown sugar
-1egg
for the filling:
-100g of softened butter
- 80g of brown sugar
-2tbsp of ground cinnamon
For the icing:
-icing sugar
-warm water
1. In a bowl, mix the 350g of flour and the yeast. Then make a well in the center, add the milk, and mix. Add the previously beaten egg and mix again. Add the sugar and mix. Make another well, add the softened butter, and mix.
2. Flour your work surface and place the dough on it. It is very sticky, that’s completely normal. Add the 50g of flour in two batches, and knead for 10 MINUTES NON-STOP. This is the secret! Adjust with a little more flour if needed; the dough should be just slightly sticky. Place it in a bowl, cover with cling film, and let it rest for 2 hours at room temperature. (If you have an oven that is currently cooking something, let the dough rise near the oven; the warmth is your best friend here.)
3. Meanwhile, prepare the filling by mixing all the listed ingredients together.
4. Once the dough has risen, lightly flour your work surface and rolling pin, then roll out the dough into a rectangle.
5. Spread the filling over the dough, then cut it into 8 strips. Roll each strip up on itself and place them in a dish that has been greased and floured.
6. Generously brush the sides and tops of the brioche rolls with milk, then cover the dish with cling film. Let them rise for 1 hour.
7. Brush the brioche rolls with milk again, then bake at 180°C (356°F) for 25 minutes, using conventional heat (top and bottom heat).
8. When they come out of the oven, brush them with milk one last time (3 times in total), then prepare the icing. Drizzle the icing over the brioche rolls.
